Salt suppresses the perception of bitterness on the tongue - a well-documented sensory phenomenon. When sea salt meets 70% dark chocolate, it allows the natural sweetness of date powder and the complex flavour compounds of cocoa to become more prominent.
This is the science behind why sea salt and dark chocolate is one of the most sophisticated flavour pairings in confectionery. We use natural sea salt - not refined table salt (which is industrially processed and often contains anti-caking additives). Sea salt retains trace minerals like magnesium and potassium from evaporated seawater, adding a faint mineral complexity alongside the contrast.
- 70% dark chocolate paired with natural sea salt as a flavour accent
- Sea salt suppresses bitterness - making this bar taste naturally sweeter without extra sweetener
- Naturally sweetened with dates - zero refined sugar, zero sugar alcohols
- Natural sea salt only - not table salt, not iodised salt, no anti-caking additives
- Stone ground for 24+ hours, no emulsifiers, no palm oil
- Vegan, gluten-free, the most approachable of our 70% range

A pinch of natural sea salt. A 70% dark chocolate base sweetened only with date powder. Three ingredients total. The sea salt does not mask the chocolate - it reveals it. The result is the most complex, sophisticated bar in our range.
A Conscious Approach to
Salty Dark Chocolate
This bar builds on our 70% dark chocolate - with one intentional addition.
A touch of sea salt is added to sharpen cocoa flavour, not to create contrast or sweetness. The base remains the same: real cocoa, date sweetness, and nothing unnecessary.
- ✓ Just cocoa (cocoa mass and cocoa butter), dates, and sea salt - used with restraint.
- ✕ There’s no refined sugar, no palm oil, and no flavour engineering.
This is not a flavoured candy bar.
It’s a conscious dark chocolate with purpose.

Noticed something white on your bar? That's Bloom - not mould.
A white or grey film on chocolate looks alarming. It is not mould, it is not spoiled, and it does not mean the bar went bad. It is called Bloom - and it only happens to real chocolate made with actual cocoa butter and no artificial stabilizers.

When humidity or condensation touches the surface, the natural sugars from date powder dissolve into tiny water droplets. When that moisture dries up, they re-crystallize as a white, powdery layer.
Think of it like wet sand drying on glass - the grains come back as visible crystals.
Real cocoa butter exists in six different crystal structures. When temperature goes up then cools, the fat crystals rearrange and travel to the surface - leaving grey-white streaks or patches.
Think of it like candle wax that cooled unevenly - same idea, different material.
Most supermarket chocolates add emulsifiers (soy lecithin, PGPR) and stabilizers that lock the fat and sugar artificially in place - making the bar look perfect even after temperature changes. This is not better chocolate. It is a cosmetic fix that also changes how the chocolate melts, feels, and releases flavour.
Bittersoil uses none of these. Our bars may bloom. We think an honest bar beats a perfect-looking one every time.
Yes - completely. Bloom is only a physical change in how sugar or fat crystals arrange on the surface. It does not affect the flavour, nutrition, or safety of the chocolate at all. If the smell is normal, the chocolate is perfectly fine to eat.
Yes. Real cocoa butter begins to soften at around 34-38°C - just below body temperature, which is exactly what gives premium dark chocolate its melt-in-mouth quality. During Indian summer transit, partial softening is normal and expected. A bar that never softens in Indian summer heat contains palm oil or hydrogenated fat - not real cocoa butter. To firm it up: keep sealed and place at 18-22°C for 1-2 hours.

FAQs
Honest & Short
Natural sea salt - not refined table salt. Natural sea salt is harvested through evaporation of seawater and retains trace minerals like magnesium, potassium, and calcium. Table salt is industrially refined and often contains anti-caking additives. In this bar, sea salt functions as a flavour enhancer - suppressing the bitterness of 70% cocoa and amplifying the natural sweetness of date powder.
Salt suppresses the perception of bitterness on the tongue - a well-documented sensory phenomenon. When bitterness is reduced, the natural sweetness already present from date powder becomes more prominent. This is why our Sea Salt 70% often tastes noticeably sweeter than the plain 70%, even though both contain the same amount of date powder. No additional sweetener was added - salt simply lets you taste what was already there.
Yes - this is the most approachable of our 70% variants. The sea salt significantly reduces the perceived intensity of 70% cocoa, making it a natural bridge between the plain 70% and the 55%. If you find plain 70% too intense, or if you are buying for someone new to high-percentage dark chocolate, the Sea Salt 70% is the better starting point.
The chocolate is sweetened only with dates powder (0g added refined sugars, FSSAI certified). Sea salt adds negligible carbohydrates. From a glycaemic standpoint, this bar is nutritionally equivalent to our plain 70% dark chocolate. In moderation (1-2 squares per day), it is a sensible choice for diabetics. Always consult your physician.
The sea salt is used as a flavour accent, not in large quantities. Exact sodium figures will be confirmed in the FSSAI lab report - please check the nutritional table for certified values. If you are on a medically supervised strict low-sodium diet, please consult your physician before consuming.
Store in a cool, dry place between 18-22°C away from direct sunlight. Do not refrigerate. Shelf life is 6 months. Once opened, consume within 2-3 weeks.
